
Like most of you, we are super busy during the week so having easy meals planned have been a game changer for me! I posted a reel on Instagram showing the easy meals we made last week so I thought I would put the simple recipes on here for you all to grab for inspo!
Chicken Sausage Sheet Tray:
This one is super easy and great for using vegetables that are on their last leg! Take any kind of chicken sausage (we love the ones from Costco), slice them up on a try with veggies – sweet potatoes, 1/2 purple onion, brocolli, carrots, bell peppers – throw it all on a sheet pan (this one is the BEST), toss with olive oil, salt and pepper. We put in the oven at 375 for about 20-30 minutes, then just throw on top of rice! We also love to top it all off with this sauce – so so good!
Shredded Chicken Crockpot Tostadas:
We eat crockpot chicken at least once a week! You can use this same recipe for tacos too but we usually just add 1-2 lbs of chicken to a crockpot with a jar of salsa + taco seasoning. Sometimes we add some cream cheese too if we want the chicken to be really creamy! We cook the chicken on high for 4-6 hours, shred it up and place it on top of a flat tostada shell. We add shredded lettuce, tomatoes, cheddar cheese, olives and top with this sauce. Theres’s a ton of leftovers and we use it to make enchiladas later in the week.
Chicken Meatballs with Pineapple Salsa:
Amylu chicken meatballs are another great family favorite (we get them at Costco), that are very simple to make! We usually throw these into the air fryer or oven on nights that we are out late because of sports and the meal is ready in less than 15 minutes. We serve them over rice and add a little chopped pineapple, purple onion and cilantro on top – super easy and a high protein meal!
Shredded Chicken Enchiladas:
This is where our leftover shredded crockpot chicken comes in! I throw the leftovers in a pan to heat up with a can of black beans! I then roll up that filling with some shredded cheddar cheese into low carb tortillas and stack them into a pan that is covered with red enchilada sauce. Top with cheddar cheese, throw in the oven at 375 for 20 minutes and top with cilantro when done!
